About Lemon sole

The lemon sole (Microstomus kitt) is a right-eyed flatfish with an oval body, a small head and a tiny mouth. The eyed side is yellowish to reddish brown, often marbled with darker and paler patches, and the lateral line runs almost straight. The species is common from the Barents Sea and Iceland south to Biscay, and it occurs along the whole Norwegian coast, but it is absent from the Baltic. It lives at about 10–260 m, often on hard ground or on gravel and sand near rocks. It feeds on worms, shrimps and other small crustaceans, plus small bivalves. Spawning takes place in summer. It can reach about 65 cm and 3 kg, but market fish usually weigh 300 g to 1 kg. It is highly valued as food. Anglers catch it on small hooks baited with worm or shellfish. Norwegian Red List 2021: Least Concern (LC).
